Sometimes when I pull chicken out of the freezer I wonder how I’m going to spice it up? Last time I used BBQ sauce, but I am also a fan of throwing together a spice rub or using corn relish. This time I was feeling like some comfort food and knew exactly what I wanted when I noticed I had tomato sauce and cheese. Chicken parmesan it is. This is my easy BBQ Chicken Parmesan recipe.

  • Boneless, skinless, chicken breasts
  • Eggs
  • Tomato Sauce
  • Mozzarella Cheese
  • Bread (broken into breadcrumbs)
  • Parsley (when completed for extra seasoning)

I start off by dipping my chicken into a bowl of eggs, roll it in the breadcrumbs and place them in the fridge for a few hours so the breadcrumbs stick to the chicken. I find if you don’t let them sit in the fridge for a while the breadcrumbs stick to the grill. When I’m ready to BBQ the chicken I warm the BBQ and wet a paper towel with olive oil and wipe down the grill to help with the breadcrumbs from sticking as well.

I cook the chicken on the upper part of the grill to prevent blackening the breadcrumbs and when they are almost cooked I smother them in tomato sauce. I let the sauce get hot for a few minutes and then sprinkle some shredded cheese on top. After letting the cheese melt in the heat for another minute this chicken parmesan is ready to be served.
